Plumbing is in, concrete poured, gas piping going in and prepping for the insulation. It will be recycled cellulose, blown in between the roof and sub ceiling. We feel so techincal, throwing around terms like that. Construction is, of course, slower than we would like but we are pleased progress is ever forward.
Meantime, we have been researching suppliers. We are thrilled to say that we will be serving pasture fed bison from Okeechobee's Happy Tails Ranch. Chef has been experimenting and the results are delicious. Bison chili is a sure thing. Also, Crazy Hart Ranch in Fellsmere will be supplying us with pasture raised chicken. We are truly blessed to have local producers fighting an uphill battle so that we can eat meat raised the natural way; grass fed meat being so much more nutritious and healthy for us. Not to mention tasty!
Of note: there will be a Slow Food Dinner at Varri Green Farms (http://www.varrigreenfarm.com/) on February 27th. We can not wait! We hope to see you there.
The website is also under construction. We had a preview and it will be beautiful. Our admiration for Matt Perez (http://www.mjpdesign.net/) knows no bounds. Once again, though, can't be done soon enough for us.
We are hoping to open our doors by April. Meantime, people, know that we are working hard for the opportunity to serve you.
