We officially have our permit! Hard to believe it is actually here, after three months of diligence. We are breathing deeply and grilling our happiness tonight. Our best guess is about two months until opening, but we accept that there are many things beyond our control. This we have learned recently.
Meantime, we are actively seeking out suppliers and connecting with people like Localecopia and Slow Food (see People We Admire) to promote the local food cause. Where it can not be local, we will look for organic, all natutral, non GMO alternatives. But it is not always easy. Chef and I hardly eat out anymore. The majority of places we have tried use so many pre-fabricated ingredients that the preservatives and colorings and chemicals make us ill. We can promise you that we will seek out the best food ingredients to make our homemade soups and specials!
