Why do we work so hard (and trust me, we do) to bring you real food, made from scratch? Because we are what we eat! Because no one asked us if we wanted to be the guinea pigs for untested genetically modified foods! Because it tastes so good! We are dedicated to feeding you delicious food that nourishes body and soul.
Why don't we let customers in before 11:30 a.m.? We LOVE the enthusiasm, don't get us wrong, but we are in a bind on that one. First off, cooking food fresh each day means that although Chef gets in early, it's not going to be ready before 11:30. And a sad part of modern life is that if we were to let you in before our stated hours of operation, our insurance company would be dead against it. There are things we must do, that go against our sense of hospitality, that business regulations require us to do. We appreciate your understanding and patience.
Why don't we make that dish you like so much more frequently? Part of buying local and from farmers means that we can not have whatever we want whenever we want it. For example, we currently purchase a half hog from our beloved pork producer. It is the most delicious, most humane pork we have ever had and we are blessed to have such a wonderful product available to us. But we can not offer more pork until more pork is ready to be harvested. Also, we truly believe variety is the spice of life and creativity is the juice that keeps us young. So, take the opportunity to constantly try something new. Your brain's health and intelligence is determined by how many neural connections you have; you can only make more neural connections by learning something new; learn to enjoy new foods and get smarter, stay healthier longer!
