We wanted to take this opportunity to spotlight one of our local producers; Palmetto Creek Farms.
Jim is our farmer there and he has made it his mission "to provide the best pork you will ever have on your fork." How? He, and his family owned operation, carefully selected the breed of pig through the painstaking and expensive process of trial and error. They crafted a custom feed to support the pigs' free range diet without overpowering it. They allow nature to do it's work, with minimal interference in respect to allowing sows to raise piglets, and the pigs to decide if it's time for a roll in the mud or a quick snooze in the comfy barn. And when their final day comes, the pigs have NO idea. Jim is so conscientious, that he runs them through the routine many times before hand. That means they never see it coming, they are completely relaxed, and it is over in one painless moment. Truly, this is stewardship - better for the meat physiologically, better for our hearts and minds, a kinder fate than many of us face. This level of care leaves us with no guilt over being carnivores! Chef has been very crafty at using the whole hog, which is a much more sustainable way to eat. Purchasing this way, we see how few ribs or bacon comes off one pig. We have spent our lives eating prime cuts alone, and that can only be sustained by CAFO's. Most of all, though, it is the most delicious pork we have ever tasted!
