Ingredients

Green cuisine means different things to different people. For some it is vegetarian or vegan. In our current feedlot system of meat production, it takes approximately 18 pounds of grain for every pound of meat. So, vegetarianism is a lot lower impact on the environment. We, however, are looking for more of a middle path.

We embrace our omnivirous heritage, yet agree that the consumption of meat should be in balance with the consumption of a wide variety of nutritious grains and vegetables. Ideally, all the animal products we consume would be pasture raised locally; a trend we hope to promote in this area. We believe in the judicious use of butter, milk, and live cultured dairy products, but will only use product that is free of synthetic growth hormone. We respect food tremendously and want to create from real food ingredients.

In our every ingredient choice we will strive to choose: local ingredients, organic ingredients, natural ingredients free from fillers, preservatives, colorings or additives, ingredients free of Genetically Modified Organisms, ingredients that are minimally mechanically or chemically processed.
