Insulation

The aggravation of insulation. Insulation seems universally dubbed green because of the energy efficiency increase with installation. Even fiberglass, because they now offer it from recycled material. Spray foam is the big craze, but then you get into the murky subject of closed cell vs. open cell foam. And, no mater what else they tell you is in there, it is primarily a petroleum product. Not to mention the price. I  have found a local source for recycled denim; it may even be affordable. But now it all hangs upon Ft Pierce fire code. Some cities require foil backed foam be installed over commercial kitchens. I doubt there is foil backed denim. If this turns out to be the case, perhaps I can add something to the denim to meet code? We shall find out Monday. Anyone in the know is officially invited to comment.

Good news: met with Jack Ahern, the architect, and we have revised the floorploan yet again.The prep and dishroom space now is vastly better for range of motion. We are much impressed with his knowledge and well-thought out options. It is tremendous for Chef to be able to design his own kitchen. He got a 10 burner stove - sweet! We will have natural gas powering all the commercial equipment, the greenest of choices. Historic downtown enables us to have this option. In fact, there is an outlet right next to the shop that was slated for removal until we signed up. It is a good analogy for what we hope to do; take the best things from the past to live a more conscious future. We'll be expressing that belief in food.
